It’s been a while. But we’re back, ready to go with heaps of new recipes for a new year (attempting at least one a week, ahh) – but lets start with the best: Breakfast? Let’s do this. Say a massive OLA to chorizo, eggs, avocado, peppers, mushrooms and tomato. For the next 20 minutes, these will be your new best friends. Screw that, they will be your pals for life. Once you’ve got this combo down pat, you’ll never look back. But seriously.
I’m 100% a sucker for indulging in banana, coconut, blueberry oat pancakes (tut tut, grains), and anything with eggs for breakfast is a winner (folded scrambles, bacon with roast tomatoes happen way too often)- but only recently have I began adding more vegetables into my morning routine. New flavour combinations that keep you fuller for longer? Winner.
Try this one out if you’re pushed for time – literally takes about 5 minutes to make, and probably another 5 to devour. Not kidding, it just disappeared this morning. The best part is, its meant to look messy. Its not meant to be perfect. So roughly cut those avocados and get them fryin’! Make sure you put on some happy tunes (walking on sunshine was blasting this morning) and have a good groove around the kitchen as you whip up this new favourite – it’s a sure fire way to kick start your morning!
One pan perfection
1 small (smokey) chorizo sausage, cut in rounds
1/2 avocado, roughly chopped
1/2 red pepper, roughly chopped
2 mushrooms, roughly chopped
1 large tomato, cubed
A bunch of fresh basil, torn
1/4 red onion, finely diced
Splash of olive oil
What to do:
In a large saucepan, chuck the sausage, onion and olive oil in and fry on a medium heat until fragrant (and the sausage is cooked).
Add in the peppers and mushrooms, mix around with a spoon and cook for 2 min.
Crack two eggs in the pan, and turn the heat up a weeny bit for another 3-4 min, season with S+P.
Add in the tomato, avo and basil and gently combine.
