Sometimes those chocolate cravings just get to you. You know the ones. When literally all you can think about is something dangerously good…or bad…either way you look at it, those cravings exist. It might be because you’ve had a particularly stressy kind of day, or you just feel like treating yourself, which is totally fine – but who wants to feel the guilt after indulging? You didnt raise your hand did you. I thought as much, and…. well, I’ve found the solution. It is literally is the easiest thing to make, and it just so happens to ticks all the right boxes. Chocolatey? Yep. Sweet? Yep. Dairy and gluten free? GUILT FREE? Hell yesssssss!

The best part about these crepes is that you probably have all the ingredients right there in your kitchen. Seriously. The crepe batter itself? Three (with the optional fourth!) ingredients –  one banana, one egg, one tsp. baking powder and the optional splash of vanilla (Please don’t die of excitement) – these bad boys make a super light and airy crepe batter, which when cooked in a thin layer of coconut oil(10 times better for you than butter!) gives a fruity, soft pancake that you can top with as much fruit, cacao nibs and shredded coconut that your heart desires! If you have more of a sweet tooth, you might even consider a splash of honey in the mix, or drizzled over the top when you’re done. Im telling you, this is the way forward in guilt free indulgences!

How do you make these babies? Keep on reading, oh wise one.

NANA PANCAKES (now we all know what Jack Johnston was singing about) – Serves 1 breakfast portion.

1 banana (the riper the sweeter)

1 egg (whole)

1 tsp baking powder

1tsp. honey and/or vanilla essence (optional!)

How? Mash everything in a bowl. Alternatively, blend until smooth. That is literally all. Then cook as a thin pancake with 2 tsp of coconut oil – if the mix is too chunky for whatever reason, throw another egg in there and keep whiskin’. voila.

I have, however had a recent craving for chocolate mousse. What is not to looooove about this legendary food – light, aerated and CHOCOLATEY, its soft, velvety and its a little slice of heaven on earth. Whats that you say? Of course I’ve managed to make a recipe for it. But its bad for you? Pffffft. Try this out peeps, you won’t be disappointed –

HEY HO PALEO CHOCMOUSSE

2 avocados, preferably ripe (nice and mushy)

1/4 cup honey

1/2 cup raw cacao powder

1 tsp cinnamon

slash of vanilla essence

2 tbsp. coconut oil, melted

Blend until smooth.

When you’ve made both these wonderful inventions, combine the two and layer on the fruit. You’ll thank me later.
